Chicken Mushroom Quesadillas, p. 138

The chicken quesadillas received a 4.5. We thought they were delicious and I would make them again. Darol thought they could have been a bit more seasoned. If I make them again, I would put some cajun seasoning on the chicken. I did add some yellow pepper to the onions/mushrooms & garlic. I used coby cheese, the cheddar would have been more tasty. I find with Ellie's recipes I can prepare most of the ingredients ahead of time, so my prep & clean-up time is shorter.


Pork Mango Stir-Fry

The pork mango stir-fry received a 4.5 star from the "man of the house". We thought this was a delicious meal. I went light on the six pepper seasoning (I used this instead of the powder)
The fresh ginger was a bit over whelming, so I went with a little less. The mango flavored the pork nicely. I marinated the pork with the low sodium soy. I would not do this again, as it made the meat taste a bit too salty. I complimented this with acorn squash. This is a make again dish for us!

Tri-Color Pepper Steak, p. 118

I prepared the tri-color pepper steak for our Sunday dinner. The dish was good, but somewhat bland.
I diced the garlic, the recipe indicated slicing it. Perhaps that would have added more flavor. The wine created a delicious taste. I added fresh mushrooms to the veggies. I sprinkled cajun spice and topped the individual servings with roasted red pepper. This helped to spice up the dish. I was concerned about the beef being tender with the short amount of cooking time, it was tender! Yum!
